Instant Pot Barbecue Chicken Sliders

Ingredients:

Chicken
  • 1 cup barbecue sauce
  • 1/2 cup water
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons smoked paprika
  • 1 ½pounds boneless, skinless chicken thighs (about 6 thighs)
  • 1 package Hawaiian rolls
Slaw
  • 1/3 cup white vinegar
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • 1/2 head green cabbage (about 6 cups), shredded
  • 1 small red onion, thinly sliced

Directions:

  1. In the bowl of an Instant Pot, combine the barbecue sauce, water, vinegar, soy sauce and smoked paprika. Add the chicken thighs, mixing to coat thoroughly.
  2. Set the Instant Pot to manual high pressure for 20 minutes, followed by a quick release of the sealing valve.
  3. Meanwhile, make the slaw: in a large bowl, add the white vinegar, honey and salt. Whisk to combine until the honey and salt have dissolved. Add the shredded cabbage and onions to the bowl and toss to combine.
  4. After the pressure has released, transfer the chicken to a medium bowl. Turn the Instant Pot to the sauté function on low and reduce the barbecue sauce until thick, about 10 minutes.
    Shred the chicken with the tines of a fork. Place the shredded chicken in the pot and toss with the sauce.
  5. Assemble the sandwiches on the slider buns with pulled chicken and slaw.
